These are very, very good. I like them with butter and honey or butter and blackberry syrup. Great for a snack, dessert or side. Enjoy Ingredients:
18 ounces frozen blackberries |
4 cups flour |
3/4 cup granulated sugar |
3-1/2 teaspoons baking powder |
3 cups shortening |
5 eggs |
Directions:
1. Place ice cubes in a blender and process to crush. 2. Set aside 4 of the blackberries and add the remaining berries to the blender or food processor along with the sugar and puree until smooth. 3. Add ice cream and milk and process until smooth or to the desired consistency. 4. Pour into 2 tall glasses and garnish with the reserved berries. 5. Serve immediately.Thaw berries well then drain off syrup and save. 6. Sift together all dry ingredients. 7. Measure blackberry syrup and add enough syrup to make 1/2 cup. 8. Place shortening in heavy deep kettle and begin heating gradually. Beat eggs with syrup until foamy. 9. Mix quickly into dry ingredients and fold in berries then drop from a tablespoon into hot oil. 10. Turn fritters occasionally. 11. When browned drain on paper towels and serve warm. |
