Knowing that I love Blackberries, a good friend & fellow cook from Ohio sent me this recipe. It's originally from the Braxton County WV Sr. Citizen's Cookbook. We really enjoyed this...hope you do, too!!! This is for a single batch & can easily be doubled. Ingredients:
1 cup flour, unbleached preferred |
1 cup granulated sugar |
1/4 teaspoon salt |
2 teaspoons baking powder |
1 cup milk |
2 cups blackberries |
1 tablespoon butter |
Directions:
1. Preheat oven to 400°. 2. Sift dry ingredients together. 3. Add the milk & beat well. 4. Melt butter in a 3 deep 8 X 8 baking pan. 5. Pour in the batter & then add the berries on top. 6. Bake for 30-35 minutes or until golden brown. The batter will rise to the top of the cobbler & make a light, rich crust. 7. NOTE: Be sure to test the the center because it tends to be the last to bake & might be under-cooked. |
