These are extremely tasty. I got this recipe from my mother-in-law. She made these when her blackberries were in full bloom and she would have gallons upon gallons of blackberries. These are also good with raspberries and blueberries. Read more . Enjoy Ingredients:
1 cup butter softened |
3/4 cup powdered sugar sifted |
2-1/4 cups all purpose flour |
1/2 cup pecans finely chopped |
4 eggs |
1-1/2 cups granulated sugar |
1/2 cup lemon juice |
1 teaspoon baking powder |
1-1/2 cups fresh blackberries |
Directions:
1. Preheat oven to 350. 2. Beat butter in medium bowl with mixer until fluffy. 3. Add powdered sugar then beat until combined. 4. Beat in 2 cups flour then stir in 1/4 cup of the pecans. 5. Press on bottom of greased rectangular baking pan and bake 20 minutes. 6. Combine eggs, sugar, lemon juice, baking powder and remaining flour in large bowl. 7. Beat with mixer on medium speed 2 minutes then sprinkle berries over prepared crust. 8. Top with filling and remaining pecans then bake 35 minutes longer and cool. 9. Sift additional powdered sugar over top then cut into bars. |
