BLACKBERRY CINNAMON PANCAKES This is a recipe I obtained from an Estate sale. I obtained it when I purchased the family collection from the White Estate in Frisco, Texas in 1984. Ingredients:
2 cups sifted flour |
3 teaspoons baking powder |
1/4 cup sugar |
1 teaspoon salt |
1/2 teaspoon ground cinnamon |
1-1/2 cups milk |
1/4 cup shortening melted |
2 lightly beaten eggs |
1-1/4 cup fresh blackberries |
Directions:
1. Mix flour, baking powder, sugar, salt and cinnamon then add milk, shortening and eggs. 2. Mix lightly and stir in berries then spoon batter onto lightly greased hot griddle. 3. Cook on both sides turning once. |
