BLACKBERRY CHEESE PANCAKES This is a recipe I obtained from an Estate sale. I obtained it when I purchased the family collection from the Tinsley Estate in Venus, Texas in 1987. Ingredients:
1-1/2 cups cottage cheese |
4 eggs |
1/2 cup flour |
1/4 cup granulated sugar |
2 tablespoons butter melted |
2 teaspoons vanilla |
1 cup blackberries |
blackberry syrup |
1 pint fresh blackberries |
1/4 cup water |
1/2 cup granulated sugar |
1 tablespoon fresh lemon juice |
Directions:
1. Combine cottage cheese, eggs, flour, sugar and butter in a bowl then mix well. 2. Stir in vanilla then add blackberries 3. Cook batter on a hot greased griddle until light brown on both sides turning once. 4. Serve with butter and blackberry syrup. 5. To make syrup carefully wash blackberries then pour into heavy pot with water and sugar. 6. Bring to boil then reduce heat and simmer 10 minutes stirring occasionally. 7. Press through a fine sieve to remove seeds then add lemon and cool and serve. |
