Ingredients:
1/4 cup plus 2 tablespoons butter or margarine, softened |
3/4 cup sugar |
1/2 cup firmly packed brown sugar |
4 eggs |
1/2 cup whipping cream |
1/4 cup light corn syrup |
1/4 teaspoon salt |
3/4 cup chopped black walnuts |
1 teaspoon vanilla extract |
1 unbaked (9-inch) pastry shell |
whipped cream (optional) |
Directions:
1. syrup, and salt, beating well. Place over rapidly boiling water and cook, stirring constantly, 5 minutes or until mixture thickens. Stir in walnuts and vanilla. Cream butter in top of a double boiler; gradually add sugar, beating well. Add eggs, one at a time, beating well after each addition. Add whipping cream, syrup, and salt, beating well. 2. Place over rapidly boiling water and cook, stirring constantly, 5 minutes or until mixture thickens. Stir in walnuts and vanilla. 3. Pour filling into pastry shell. Bake at 350° for 45 minutes or until set. Cool and serve with whipped cream, if desired. 4. Note: 3/4 cup chopped hickory nuts may be substituted for chopped walnuts. |
