BLACK WALNUT BANANA PANCAKES This recipe came from an estate sale. I obtained it when I purchased the family collection from the Rodgers Estate in Crandall, Texas in 1988. Ingredients:
2 cups all purpose flour |
4 teaspoons baking powder |
1/4 cup sugar |
1/2 teaspoon salt |
2 eggs |
1-1/2 cups milk |
1/4 cup butter melted |
1/2 cup chopped black walnuts toasted |
2 medium bananas sliced 1/2 thick |
vegetable oil as needed |
syrup for accompaniment |
Directions:
1. Stir together flour, baking powder, sugar and salt in mixing bowl. 2. Beat eggs in separate bowl then stir in milk and butter. 3. Add liquid mixture to dry ingredients stirring just until blended. 4. Fold in walnuts and bananas. 5. Heat greased griddle or skillet over medium heat or to 375. 6. For each pancake pour scant 1/4 cup batter onto hot griddle. 7. Cook pancakes until puffed, bubbly and dry around edges. 8. Turn and cook other sides until golden brown. 9. Serve with your favorite syrup. |
