This is one of the cookies that makes it to my gift trays each Christmas. This is a cookie that is easy Ingredients:
1 pound bittersweet chocolate chopped |
11 tablespoons unsalted butter |
1/2 cup all purpose flour |
1/2 teaspoon baking powder |
1/8 teaspoon salt |
4 eggs |
1-1/2 cups granulated sugar |
1-1/2 tablespoons instant espresso powder |
1-1/2 tablespoons vanilla |
1-1/4 cups coarsely chopped pecans |
2 cups semisweet chocolate chips |
Directions:
1. Preheat oven to 350 then lightly grease baking sheets or line with parchment paper. 2. Place chocolate and butter in top of a double boiler over hot water until melted. 3. Stir occasionally then set aside. 4. Sift together flour, baking powder and salt then set aside. 5. Combine eggs, sugar, espresso powder and vanilla in large bowl. 6. Beat with wooden spoon or paddle attachment of a upright mixer until well combined. 7. Pour in chocolate mixture and mix well then gently fold in flour mixture, pecans and chips. 8. Drop by heaping tablespoonfuls 2” apart onto prepared baking sheet then bake 15 minutes. 9. Remove from wire racks to cool. |
