Black Soybean, Chickpea and Mushroom Stew |

Hardy high protein vegetable stew like soup. Ingredients:
1 tablespoon olive oil |
1 cup onion, chopped |
3 cloves garlic |
2 cups black soy beans rready to cook |
2 cups chickpeas, ready to cook |
2 cups mushrooms, sliced |
1 cup carrots, sliced |
4 cups beef broth |
1 cup corn, frozen |
Directions:
1. Briefly heat heavy dutch oven, when just hot add oil. 2. Turn heat to medium high and saute chopped onions for 2 min. 3. Add carrots, continue to saute for 2 min. 4. Add garlic and spices of choice, stir in. 5. Add sliced mushrooms, continue sauteing until mushrooms are cooked through and fragrant. 6. Add beef broth, beans. 7. Bring to a boil, turn down heat to medium low and simmer for 2 hours or until ready. |
