If you love tapenade, you will love this spicy olive pate flavoured with roasted garlic and Fontina cheese. Yield: 1 1/2 cups Ingredients:
1 large head garlic, roasted |
1/2 pound fontina cheese, cubed |
1 cup black olives, drained and pitted |
1/4 cup olive oil (do not substitute) |
1/2 tsp crushed red pepper flakes |
Directions:
1. Pinch the garlic pulp into a small bowl. Set aside. 2. Melt cheese in a double-boiler over simmering water, stirring until smooth. 3. Using a food processor or heavy-duty blender, puree olives, garlic, and olive oil about 15 seconds. 4. Add melted cheese and pulse about 10 more seconds until combined. 5. Remove to serving dish and cover with plastic wrap touching the top of the spread. Refrigerate at least 2 hours. |
