Mexican dish collected while living in Albuquerque New Mexico Ingredients:
2 (4 ounce) cans chopped green chilies |
2 (4 1/2 ounce) cans chopped black olives |
2 medium tomatoes, finely chopped |
6 green onions, finely chopped |
2 tablespoons salad oil |
2 tablespoons red wine vinegar |
salt and pepper |
Directions:
1. mix ingredients and allow to chill several hours. 2. Serve with corn or tortilla chips. 3. Vary by adding a 1 lb bag of rotini noodles and serving as a salad. 4. I make large batches and keep in the refrigerator. 5. Will keep several days in sealed containers. |
