I got this recipe from TOH several years ago. My copy is just about unreadable, so I'm posting here for safe keeping. I made this several years ago for Christmas and it is very delicious. The kids in our families really enjoyed it also as they all like mushrooms, cheese, and black olives. Prep time is approx. I hope you enjoy. Ingredients:
1/2 cup sliced fresh mushrooms |
1/2 cup chopped green pepper |
1/4 cup butter or 1/4 cup margarine |
10 eggs |
1/2 cup all-purpose flour |
1 teaspoon baking powder |
1/4 teaspoon salt (optional) |
2 cups small curd cottage cheese |
2 cups shredded cheddar cheese |
2 cups shredded monterey jack cheese |
1/2 lb bulk pork sausage, cooked and drained |
6 slices bacon, strips cooked and crumbled |
1 (2 1/4 ounce) can sliced ripe olives, drained |
Directions:
1. In a skillet, saute mushrooms and green pepper in butter until tender. In a mixing bowl, combine eggs, flour, baking powder and salt if desired; mix well. Add mushroom mixture. Stir in remaingin ingredients; mix well. Pour into a greased 13-in x 9-in x2 -in baking dish. Bake, uncovered at 400 for 15 minutes. Reduce heat to 350 and bake 25-35 minutes longer or until a knife inserted near the center comes out clean. |
