This is a very popular dish in the great State of Texas. Black-eyed peas are a staple and this is an incredible way to eat them. I normally serve this as a side with grilled Chicken or Salmon. It's hearty and good as a stand-alone dish as well. Read more . Enjoy Ingredients:
2 pounds ground beef |
1 large white onion chopped |
1 rib celery chopped |
15 ounce can jalapeno black-eyed peas |
1 can cream of chicken soup |
1 can cream of mushroom soup |
1 can hot or mild enchilada sauce |
1 teaspoon garlic powder |
10-1/2 ounce bag tortilla chips |
3 cups grated cheese |
Directions:
1. Brown and drain meat. 2. Add onion, black-eyed peas, celery, soups, enchilada sauce and garlic then stir to blend. 3. Grease 1 large casserole dish. 4. Build up layers beginning with the chips then the meat and then the cheese. 5. Repeat process and bake at 450 for 35 minutes. |
