I had some black-eyed peas in my pantry, but I didn't know what to do with them, so I found a recipe on recipezaar, but I didn't have the right ingredients, so I substituted just about everything and came up with a delectible concoction! Ingredients:
1 (12 ounce) package frozen cooked winter squash |
1 (15 ounce) can black-eyed peas |
1 (8 7/8 ounce) bag uncle bens ready whole grain brown rice |
4 teaspoons olive oil |
1 teaspoon garlic, minced |
1 bell pepper, chopped |
1/2 onion, chopped |
salt |
pepper |
4 teaspoons hot pepper sauce |
Directions:
1. Microwave frozen squash according to package directions. 2. Simmer black-eyed peas over low heat while preparing other ingredients. 3. Saute onion, bell pepper, and garlic in olive oil until soft, approximately 5 minutes. 4. Microwave Ready Rice. 5. Mix Ready Rice with black-eyed peas. 6. Stir in squash and the sauted ingredients. 7. Add salt and pepper. 8. Mix in hot pepper sauce more or less to achieve desired hotness (4 teaspoons will make a mild batch). |
