I found this recipe in the houston chronicle ***Flavor*** Ingredients:
1 cup yellow cornmeal |
1/2 cup all-purpose flour |
1/2 cup sugar |
1 teaspoon salt |
1/2 teaspoon baking soda |
1 medium onion, chopped |
1 (15 ounce) can creamed corn |
1 (15 ounce) can whole kernel corn, drained |
1 (15 ounce) can black-eyed peas, drained |
1 tablespoon baking powder |
2 eggs |
1 cup buttermilk |
1/2 cup oil or 1/2 cup bacon drippings |
Directions:
1. Preheat the oven to 350 degrees. grease a 9X13 inch baking dish. 2. In a large bowl, mix all the ingredients together. Pour into the prepared dish and bake for 25 to 35 minutes or until golden brown. 3. Cool 30 minutes before serving. |
