Black Eyed Peas and Sweet Peppers

Ingredients:
1/2 cup chopped cooked ham
1/2 cup chopped onion
1 medium sweet red pepper, seeded and cut into very thin strips
1 medium green pepper, seeded and cut into very thin strips
2 tablespoons vegetable oil
1 (16 ounce) can whole tomatoes, undrained and coarsely chopped
1 (15 7/8 ounce) can black-eyed peas, drained
1/4 cup water
1/2 teaspoon dried thyme
1/4 teaspoon pepper
1/4 teaspoon hot sauce
Directions:
1. Cook ham, onion, and pepper strips in hot oil in a large skillet over medium heat, stirring constantly, until tender.
2. Add tomato with liquid and remaining ingredients.
3. Bring to a boil; reduce heat and simmer, uncovered, 8 minutes, stirring frequently.
