This is a Weight Watchers recipe from the 5 Ingredient 15 Minute Cookbook. It is 3 points a cup and it is delicious! Ingredients:
2 teaspoons olive oil |
1 cup onion, chopped |
1 cup ham, diced |
2 (15 7/8 ounce) cans black-eyed peas, rinsed and drained |
1 (14 1/2 ounce) can diced tomatoes with basil oregano and garlic, undrained |
1/4 teaspoon black pepper |
Directions:
1. Heat oil in a large saucepan over medium-high heat. 2. Add onion and ham; saute 5 minutes or until onion is tender. 3. Stir in peas and remaining ingredients and cook until heated. |
