Black Eyed Pea Soup With Ham And Greens |

A comforting bowl of southern cuisine. Mighty fine with some cornbread! Ingredients:
4 tbsp vegetable oil |
2 medium onions, chopped |
2 cloves garlic, minced |
1 carrot, peeled and finely chopped |
1/2 pound cooked ham, diced |
1 pound collard greens, stems and ribs removed, finely chopped |
1pt chicken broth (canned is fine) |
5 c water |
1 bay leaf |
1/2 tsp crushed red pepper flakes |
2c cooked black-eyed peas |
2 tsp cider vinegar |
Directions:
1. In a large saucepan, heat oil over medium heat. 2. Add onion, garlic, carrot and ham. 3. Cook, stirring occasionally, until onion is soft. 4. Add collards, broth, water, bay and red pepper flakes to the pan. 5. Simmer until greens are tender, about 25 minutes. 6. Rinse and drain black-eyed peas. 7. In a medium mixing bowl mash one can of peas. 8. Stir mashed and whole peas into soup and simmer 5 minutes. 9. Season with salt and pepper; stir in vinegar 10. Heat through and serve. |
