we always had blackeyed peas and cornbread for new years day when i was growing up...this is a great soup made with the blackeyed peas so i hope you will enjoy this......... serve with corn bread, honey butter. 1 - pound ground beef |
1 pound polish sausage, cut into bite-sized pieces( browning the sausage before adding it to the pot adds more flavor) |
1- cup finely chopped onions |
two- 15 ounce cans blackeyed peas with jalapenos |
1-14 ounce can beef broth |
1- 14 ounce can diced tomatoes or (fresh) |
1- 10 ounce can mild diced tomatoes with green chiles ( like rotel) |
1- 10 ounce can chopped green chiles |
2-medium jalapenos chiles seeded and chopped |
1/8 - teaspoon salt |
black pepper to taste |
Directions:
1. place a dutch oven or heavy pot over medium - high heat . 2. add the ground beef and onions and cook until beefe is browned.stirring frequently........ 3. add the sausage, black-eyed peas, broth, diced tomatoes, and tomoatoes with chiles, green chiles, jalapenos and salt........ mix well 4. bring the mixture to a boil, reduce the heat, cover tightly 5. simmer for 45 minutes............ 6. serves 8.................... 7. note......... can make ahead and refrigerate over night to allow the flavors to blend .........then reheat |
