This is from my recipe files. My notes say it is served for Kwanzaa. Ingredients:
1 cup black-eyed peas |
3 tablespoons cider vinegar |
2 tablespoons fresh basil, chopped |
2 garlic cloves, crushed |
1 teaspoon sugar |
1/4 teaspoon black pepper |
1 medium onion, chopped |
2 celery ribs, chopped |
1 red bell pepper, chopped |
Directions:
1. Whisk together dressing ingredients. 2. Toss with beans and vegetables. Serve chilled. |
