Ingredients:
3/4 cup oil |
1/4 cup sugar |
1/4 cup balsamic vinegar |
1 (15-ounce) can black-eyed peas, drained and rinsed |
1 bell pepper, diced |
1/2 cup diced green onions |
1 large tomato, diced |
1 red bell pepper, diced |
1/4 cup freshly chopped parsley leaves |
3 tablespoons freshly chopped thyme and oregano leaves mixed |
Directions:
1. In a small bowl, whisk together the oil, sugar and vinegar. 2. In a large bowl mix together the remaining ingredients. Pour dressing on top of salad and mix well. |
