Marinated salad Ingredients:
2 1/2 cups dried peas |
1/3 cup olive oil |
1/3 cup balsamic vinegar |
2 peppers |
1 onion |
1/2 cup parsley |
Directions:
1. Soak black eyed peas or bring to boil and let sit for 1/2 hour. Cook for 20-30 minutes. 2. Meanwhile, chop peppers, onion and parsley. 3. Toss drained beans with other ingredients and chill. |
