This recipe goes with Adobo Tuna with Black-Eyed Pea Salad Ingredients:
3 tablespoons red wine vinegar |
2 tablespoons olive oil |
1/4 teaspoon salt |
1/4 teaspoon pepper |
2 (15.8-ounce) cans black-eyed peas, drained and rinsed |
2 celery ribs, diced |
1/4 cup chopped fresh cilantro |
1/4 cup diced red bell pepper |
1/4 cup diced green bell pepper |
1/4 cup diced red onion |
Directions:
1. Stir together first 4 ingredients in a medium bowl; stir in black-eyed peas and remaining ingredients. Cover and chill at least 1 hour. |
