Very tasty salad and very nice item to carry to a picnic or potluck. The black eyed peas in your life will love you for this delight. Enjoy Ingredients:
2 cups black eyed peas |
3 teaspoons ground coriander |
3 garlic cloves minced |
3 tablespoons fresh ginger grated |
1/2 teaspoon cayenne pepper |
1/4 cup olive oil |
1/8 cup red wine vinegar |
1 teaspoon salt salt |
1 teaspoon hungarian paprika |
Directions:
1. Soak peas then put in a pot with water to cover plus 1”. 2. Add coriander, garlic, ginger and cayenne. Then cook for 1 hour. 3. Prepare dressing by mixing together oil, vinegar, salt and paprika. 4. Add to peas as soon as you remove them from heat. 5. Allow to cool to room temperature then adjust seasonings and serve. |
