A perfect salad for a maindish on those hot days when you don't want to heat up the kitchen. Ingredients:
2 cans (15oz) black eyed peas, drained and rinsed |
2 tb onion, finely chopped |
1/4 c. green pepper, chopped |
1 can (15oz) corn, drained and rinsed |
1 can (15oz) diced tomatoes, drained |
1 tb minced garlic |
1/4 - 1/2 tsp. crushed red pepper (optional) |
1/2 c. italian dressing |
lemon pepper |
lettuce, torn into small pieces |
1 cucumber, sliced |
Directions:
1. In a medium bowl, combine black eyed peas, onions, green pepper, corn, tomatoes, garlic and if using, crushed red pepper. Toss lightly. Add Italian dressing, lightly mix in. Sprinkle the top with lemon pepper, cover and chill. 2. When ready to serve, place 1 1/2 c. of black eyed pea salad on top of each plate of torn lettuce. Add sliced cucumbers to the side. |
