I make these as a side dish to go with fried fish, hushpuppies and cole slaw but would also be good with fried chicken too. Ingredients:
1 can of your favorite black-eyed peas, drained |
4 strip of precooked bacon, prepared and crumbled |
3/4 of one (jarred) whole fire roasted red pepper , chopped |
enough flour to make the mixture bind together to make the little “cakes |
1 tbspn butter |
olive oil |
Directions:
1. In a medium bowl, coarsely mash beans with a fork, add bacon and fire roasted peppers to mixture. 2. Add just enough flour to mixture to help bind. 3. Season with salt and pepper. 4. Shape pea mixture into patties ( I made five). 5. Melt butter and oil together in a skillet over medium heat. 6. Add patties and brown on both sides until crispy. 7. Susana in Louisiana |
