Black-eyed Pea Burgers

Ingredients:
15 oz cooked black-eyed peas
1/2 cup chopped cauliflower, cooked very well
1/2 cup chopped broccoli, cooked very well
1/2 cup chopped cremini mushrooms
2 tablespoons cornmeal
2 tablespoons vegetable broth
4 cloves garlic, minced
1 tsp tamari
1/4 tsp cayenne
1/4 tsp chili powder
1/2 tbsp garlic powder
1/8 tsp black pepper
1/4 tsp paprika
1/4 tsp ground ancho powder
1/2 tbsp onion powder
1/8 tsp thyme
Directions:
1. Preheat your oven to 400 degrees F.
2. Puree all ingredients together in a food processor.
3. Form into 4 patties, cover and chill 1 hour.
4. Lightly coat a baking sheet with cooking spray.
5. Put the patties on the pan.
6. Bake for 15 minutes, flip the patties, and continue baking for another 15 minutes.
