Black Eyed Pea Broccoli Cheese Soup |

This is a copycat recipe from the restraunt Black Eye'd Pea. It's a great soup and pretty quick and easy to whip up! Ingredients:
1 1/2 lbs fresh broccoli |
2 cups water |
3/4 teaspoon salt |
1 pint half-and-half |
1 lb velveeta cheese |
1/2 teaspoon pepper |
2 tablespoons cornstarch |
1 cup cold water |
Directions:
1. Steam or boil broccoli until tender. 2. Place half-and-half and 2 cups water in top of double boiler. 3. Add cheese, salt and pepper. 4. Heat until cheese is melted. 5. Add broccoli. 6. Mix cornstarch and water in small bowl. 7. Stir into cheese mixture in double boiler and heat over simmering water until soup thickens. |
