Black Eyed Pea And Sausage Soup |

Good if made ahead and reheated-the flavors have a chance to marry . Ingredients:
1 can black eyed peas (do not drain) |
1/2 lb. bulk sausage (can use mild or hot, depending on how spicy you like it) |
1/4 cup chopped onion |
1 garlic clove, finely chopped |
1 cup canned tomatoes |
1/4 tsp black pepper |
1/4 tsp oregano |
1/2 to 1 cup grated cheese |
Directions:
1. Cook the sausage in a large frying pan, crumbling with a fork as it cooks. Drain fat from pan. 2. In same pand, add green pepper, onion and garlic. Cook 5 minutes stirring the vegetables into sausage. Add tomatoes and seasonings. Stir well. 3. Pour in black eyed peas with the liquid in can. 4. Cover and simmer slowly for 15 minutes. Serve very hot with grated cheese sprinkled on top. 5. If reheating soup, sprinkle cheese on when ready to serve. |
