These are large, very moist apple-cinnamon muffins perfect for a busy school day. You don't even have to tell the kids that there are beans in them - and you don't have to believe that they're low fat and protein filled, either! Read more ! Ingredients:
1 cup cooked black-eyed peas, pureed |
2 1/2 tbsp fat-free nayonnaise |
1/3 cup canola oil |
1/3 cup soy milk |
1 cup chunky, unsweetened applesauce |
3/4 cup whole wheat flour |
3/4 cup all-purpose flour |
1/3 cup sugar |
2 tsp baking powder |
1 tsp baking soda |
1/2 tbsp cinnamon |
Directions:
1. Preheat oven to 400 F, grease 12 muffin cups. 2. In a large mixing bowl, combine peas, nayonnaise, soy milk and applesauce. 3. In a separate bowl, combine flours, sugar, baking powder, baking soda and cinnamon. 4. Stir dry mixture into puree mixture just until flour is moistened. 5. Bake for 15 minutes, then cool 5 minutes in tins before turning out onto a rack. |
