Black Cherry and Yam Casserole

Ingredients:
1 (40 ounce) can yams, drained
1/2 cup brown sugar, packed
2 teaspoons cornstarch
3/4 teaspoon orange zest, finely grated
1/4 teaspoon salt
1/4 teaspoon ground cinnamon
1/2 cup apricot nectar
1 (15 ounce) can bing cherries, drained (pitted dark sweet)
1 tablespoon unsalted butter
Directions:
1. Preheat oven to 375 degrees F, then grease an 11 x7 baking dish.
2. Arrange yams in the prepared baking dish.
3. In a saucepan, whisk together the brown sugar, cornstarch, orange zest, salt, & cinnamon, then stir in the apricot nectar until smooth.
4. Bring almost to a boil, stirring constantly, then reduce heat & simmer 2 minutes, before removing from heat.
5. Add pitted dark sweet cherries & butter, stirring to melt the butter, then pour this cherry mixture over the yams.
6. Bake, uncovered for 30 minutes, then serve & enjoy!
