My Girlscout leader used to make these. They're like little chocolate cheesecake muffins. Absolutely delicious! Ingredients:
8 ounces cream cheese |
1 egg |
1/2 cup sugar |
1 pinch salt |
1 teaspoon baking soda |
1 cup water |
1 tablespoon vinegar |
1 (1 small) package semi-sweet chocolate chips |
1 1/2 cups flour |
1 cup sugar |
1/4 cup unsweetened cocoa |
1/4 teaspoon salt |
1 teaspoon baking soda |
1/3 cup oil |
1 teaspoon vanilla |
Directions:
1. In a small bowl blend cream cheese, egg, 1/2 cup sugar, and pinch of salt well. 2. Stir in chocolate chips and set aside. 3. In a large bowl sift flour, sugar, cocoa, salt, baking soda. 4. Add water, oil, vinegar, and vanilla. 5. Beat well. 6. Fill well greased and floured or lined small muffin tins 1/2 full of chocolate batter. 7. Top each with heaping teaspoon of cream cheese mixture. 8. Bake at 350 for 12 minutes. 9. Do not let tops turn brown. 10. Remove when cool. |
