This simple side dish goes perfectly with Fish Tacos with Fresh Peach/Nectarine Salsa. Ingredients:
3 cups canned black beans (about 1 /1/2 cans) undrained |
1/2 teaspoon cumin |
4 tablespoons light sour cream |
1 lime, cut into 8 wedges |
minced fresh cilantro, optional |
Directions:
1. Heat the beans and cumin together in a small sauce pan. When the beans come to a simmer; mash them lightly with a potato masher or the back of a spoon, do not over mash. Ladle into small bowls; top with 1 tablespoon sour cream and sprinkle with cilantro, if desired. Serve with lime wedges. 2.
