This is the easiest meal I make, and my super-picky toddler loves it. A rice cooker makes the process easy and fudge-free Ingredients:
1 can of black beans |
1 can of chicken broth |
1 can of tomatoes with chilies (aka ro-tel) i use the milder for my daughter |
1 cup of rice, basmati is a great choice |
some cheese, i use the fiesta blend |
Directions:
1. Open all the cans, drain most of the fluid from the tomatoes and beans 2. Add the rice to the cooker, and the contents of the cans 3. Stir and turn on rice cooker 4. Serve in bowls with some cheese sprinkled on top. This was one of the first meals I made for my adventurous eater. I stirred in the cheese and made balls on her tray for her to eat utensil-free. |
