This is so simple and a great way to use some of your homemade salsa. It goes great over rice, or you can serve it as a side. Ingredients:
1 pound soaked and cooked black beans (64 oz rinsed canned black beans could be substituted) |
1 cup salsa (see my fresh salsa recipe) |
1 large onion diced |
3 medium tomatoes, diced |
1/4 cup olive oil |
2 tablespoons of chicken bouillon |
cooked brown rice. |
Directions:
1. Cook the beans, according to directions (see pressure cooking beans recipe, if necessary). Add salsa, onion, diced tomatoes, olive oil, and bouillon. Stir well. Boil down for 1/2 hour over medium heat, stirring occasionally, or pressure cook for 10 minutes. 2. Serve over hot rice. 3. Top with fresh salsa and Tabasco to individual taste. |
