Easy, tasty side dish. Ingredients:
1 1/4 cups reduced-sodium fat-free chicken broth |
3/4 cup long-grain rice |
1 cup rinsed and drained canned black beans |
1/4 cup chopped fresh cilantro |
1/4 teaspoon salt |
Directions:
1. Bring the broth to a boil in a meduum saucepan. Add rice. Cover, reduce heat, and simmer 18 minutes or until liquid is absorbed. Stir in black beans and cilantro, cook until thoroughly heated. Stir in salt. |
