I don't do spicy real well, but the litle bit or red pepper in this is just right for me. After the beans have simmered for 5 minutes, taste and add more red pepper if you prefer more heat. Ingredients:
1 cup uncooked long-grain white rice |
2 cups water |
1 tablespoon oil |
1 1/2 teaspoons minced garlic |
1 1/2 teaspoons dried oregano leaves |
1/4 teaspoon crushed red pepper flakes |
1 (15 ounce) can black beans, undrained |
2 tablespoons diced red bell peppers |
Directions:
1. Cook rice in water as directed on package. Meanwhile, heat oil in large saucepan over medium heat until hot. 2. Add garlic, oregano and red pepper flakes; cook and stir 1 to 2 minutes. 3. Add beans; bring to a boil. Reduce heat; simmer 10 minutes to blend flavors, stirring occasionally. 4. Serve over rice and sprinkle with diced red bell pepper. |
