A black bean recipe that a good friend gave me back in college. It is awesome! I used red wine vinegar instead of regular last time and that worked out pretty well. I also don't think it needs that much olive oil. Maybe try 1/2 a cup. Optional: Top with green onions and shredded cheese Or serve with nachos or flour tortilla with cheese Ingredients:
1 lb dried black beans, soaked overnight (turtle beans) |
1 large green pepper, halved |
6 cups water |
1 large onion, chopped |
4 garlic cloves (or more) |
1 green pepper, chopped |
4 teaspoons salt |
1/2 teaspoon pepper |
1/4 teaspoon oregano |
1 teaspoon cumin |
2 bay leaves |
2 tablespoons sugar |
2/3 cup olive oil |
2 tablespoons vinegar |
Directions:
1. Soak the beans overnight. 2. Cook (covered) beans, water, and halved green pepper for 1 hour in a large pot. 3. Remove halved green pepper, and put in rest of ingredients. 4. Simmer for 2 hours or until ready to serve. 5. Serve with rice. 6. Optional:. 7. Top with green onions and shredded cheese. 8. Or serve with nachos or flour tortilla with cheese. |
