Black Beans and Corn With Salsa Dressing |

We love love this salad. It is sooo good. Ingredients:
1 (15 ounce) can black beans, rinsed and drained |
1 cup whole kernel corn, cooked |
1 sweet red pepper, cut into 1/2 -inch pieces (3/4cup) |
1 stalk celery & leaves, sliced (2/3 cup) |
1 tablespoon cilantro or 1 tablespoon parsley, snipped |
lettuce leaf (optional) |
1/2 medium avocado, pitted, peeled, and sliced (optional) |
1/4 cup salsa |
1/4 cup sour cream |
1/4 cup mayonnaise |
Directions:
1. Mix the dressing. 2. Stir together with the first 5 ingredients. 3. Garnish with sliced avocado. 4. Serve on lettuce leaves if desired. |
