Black Bean Tortilla Melts |

A recipe from Mission Tortillas. Ingredients:
6 corn tortillas |
salsa, medium as desired |
1 lime, cut into wedges |
1 (15 ounce) can black beans, rinsed and drained |
1/2 teaspoon taco seasoning mix |
1/4 cup fresh cilantro, fresh minced |
1 (4 ounce) can green chilies, chopped and undrained |
1 cup cheddar cheese or 1 cup monterey jack cheese, shredded |
Directions:
1. Preheat oven to 450°F. 2. Cut lime into 6 even wedges. 3. Mash beans. Add taco seasoning combining well. Spread about 3 tablespoons of the bean mixture on each tortilla. 4. Sprinkle each tortilla with cilantro, and squeeze 1 lime wedge over each. Top each tortilla with 2 tablespoons green chilies and 3 tablespoons cheese. 5. Place tortillas on baking sheet and bake tortillas at 450°F for 3 to 5 minutes or until cheese melts. Serve with fresh salsa. |
