This is a recipe that I discovered in one of those booklets that you see at the supermarket checkouts. It is a long time favorite. The dish takes a bit of time to make but it is worth the effort. Ingredients:

1 tablespoon butter |
1/2 cup chopped onion |
1/3 cup chopped green pepper |
8 ounces ground turkey |
15 ounce can of black beans , rinsed and drained |
8 ounce can of tomato sauce |
1.25 ounce package of taco seasoning mix |

1 cup cornmeal |
2 teaspoons sugar |
1/2 teaspoon salt |
1/3 cup milk |
1 egg, slightly beaten |
2 tablespoons butter, melted |
1 cup whole kernel corn, drained |
4 ounces cheddar cheese, shredded |

Directions:
1. Heat oven to 350. 2. Melt 1 tablespoon of butter in a skillet until sizzling. 3. Add onion and green pepper. 4. Cook over medium heat. 5. Stir occasionally until vegetables are crisply tender (2-3 minutes). 6. Add turkey. 7. Continue cooking, stirring occasionally until turkey is no longer pink (5-7 minutes). 8. Stir in beans, tomato sauce and seasoning mix. 9. Set aside. 10. Combine cornmeal, sugar, and salt in medium bowl. 11. Stir in milk, egg and 2 tablespoons melted butter just until moistened. 12. Stir in corn. 13. Press mixture on bottom and up the sides of a greased 9 inch pie plate. 14. Spoon bean mixture into cornmeal crust. 15. Bake for 20-30 minutes or until set. 16. Remove from oven. 17. Sprinkle with cheese. 18. Continue baking for 2-5 minutes or until cheese has melted. 19. Let stand 5 minutes before serving. 20. Serve with sour cream and salsa. |
