Black Bean Sweet Potato Chilli |

I found this recipe in the paper a while back. It is simple to make and my husband who doesn't like sweet potatoes really enjoys it. Ingredients:
1 tablespoon olive oil |
1 medium onion, chopped |
2 tablespoons chili powder |
1 teaspoon ground cumin |
1 teaspoon ground coriander |
2 garlic cloves, crushed |
1 jalapeno chile, seeded and minced |
1 (28 ounce) can whole tomatoes with juice |
1/2 lb green beans, trimmed and each cut crosswise in half |
3 medium sweet potatoes, peeled and cut into 1 1/2-inch chunks (about 1 1/2 pounds) |
1 teaspoon sugar |
1 teaspoon salt |
2 (15 ounce) cans black beans, rinsed and drained |
Directions:
1. Saute onion over med low heat for a couple minutes. 2. Add garlic, and chilli and spices, saute a couple more minutes. 3. Add tomatoes, green beans and sweet potatoes and turn heat to med high. 4. Bring to a simmer and add black beans and sugar bring to a boil and simmer over low heat until sweet potatoes are tender. |
