Black Bean Soup with Tomato Salsa |

From Williams-Sonoma Beans & Rice p20 Ingredients:
1 1/4 cups dried black beans |
1/4 cup olive oil |
1 large yellow onion |
3 cloves garlic |
1 tsp cumin |
2 tsp chili powder |
8 cups water |
2 tomatoes |
1/4 red onion |
2 tbsp chopped jalapeno |
2 tbsp lime juice |
2 tbsp cilantro |
Directions:
1. Soak beans 3 hours. Saute onions in olive oil in large pot. Add garlic, cumin, chili pwd, drained beans and water. Cook 2 to 3 hours until beans are very tender and begin to fall apart. 2. Chop salsa ingredients and mix together. Serve on top of soup. |
