Black Bean Soup with Tomato Salsa

Ingredients:
1 1/4 cups dried black beans
1/4 cup olive oil
1 large yellow onion
3 cloves garlic
1 tsp cumin
2 tsp chili powder
8 cups water
2 tomatoes
1/4 red onion
2 tbsp chopped jalapeno
2 tbsp lime juice
2 tbsp cilantro
Directions:
1. Soak beans 3 hours. Saute onions in olive oil in large pot. Add garlic, cumin, chili pwd, drained beans and water. Cook 2 to 3 hours until beans are very tender and begin to fall apart.
2. Chop salsa ingredients and mix together. Serve on top of soup.
