*I got in such a hurry to present this that I forgot to take a final picture.* Thick homemade black bean soup placed in a bowl, sprinkle a little Pico de Gallo (salsa) directly on surface of the soup and then balance a skewer of spiced pork kebabs on top of bowl. Read more . The kebabs just about melt in your mouth but they do have a little heat. The presentation is incredible and so are the flavors. :D Ingredients:

4 cans (15 oz. each) black beans, rinsed and drained |
6 c. chicken broth |
1 bay leaf |
puree |
half the beans and broth |
saute in 2 t. olive oil |
1 c. white onion, diced |
2 t. garlic, minced |
1 t. paprika |
1 1/2 t. ground cumin |
1 1/2 t. dried oregano |
1 t. ground coriander |
1/2 t. cayenne |
pinch each of salt and sugar |
deglaze with and add |
1 t. red wine vinegar |
1 can (15 oz.) diced tomatoes in juice |
pico de gallo |
toss together |
1 c. tomatoes, seeded and diced |
1/4 c. white onion, minced |
2 t. minced fresh cilantro |
1 t. fresh lime juice |
1 jalapeno, seeded and diced |
salt to taste |
spiced pork kebabs |
combine |
1 t. brown sugar |
1 t. chili powder |
1 t. kosher salt |
1/2 t. ground black pepper |
1/4 t. cayenne |
thread and grill |
1 lb. pork tenderloin, trimmed and cut into 1 1/2 - 2 pieces |
1/2 lb. kielbasa, cut diagonally into 1 -thick slices |
Directions:
1. Black Bean Soup: 2. Simmer beans and broth in a large pot over medium heat for 20-30 minutes. Remove bay leaf and half of the bean-broth mixture. 3. Puree the remaining bean mixture in the pot with a hand-held stick blender or in a food processor until smooth. Return reserved beans to the pot; keep warm over low heat. 4. Saute onion, garlic and seasonings in oil in a non-stick skillet until soft, about 5 minutes. 5. Deglaze pan with vinegar, then add tomatoes and their juice. Simmer to reduce slightly, then mash tomatoes lightly. Add to soup and cook another 5 minutes. 6. Serve with Pico de Gallo 7. Pico de Gallo: 8. Toss all ingredients together in a bowl; chill until ready to serve. (Keeps 1-2 days chilled.) 9. Spiced Pork Kebabs: 10. Preheat a grill or a grill pan on the stove to medium-high. 11. Combine sugar and spices in a small bowl. 12. Thread 2 chunks of pork and 1 piece kielbasa on each of 8 skewers. Sprinkle with the spices and grill until pork is cooked through, 6-8 minutes per side. Serve with the Soup. |
