Black Bean Soup With Sour Cream and Mango Salsa |

This is an adopted recipe. Hmmm... lookie, there's no mango here, yet. I aim to fix that, thanks. :) Gimme a bit o' time to take care o' that, eh! :) Ingredients:
2 cups black turtle beans |
1 cup onion, diced |
1 carrot, diced |
2 stalks celery, diced |
3 slices bacon |
2 cups chicken stock |
salt and pepper |
4 bay leaves |
1 tablespoon honey |
Directions:
1. Combine all the ingredients and add enough water to cover the beans. 2. Bring to a boil, then reduce to a simmer and cook until beans are thoroughly cooked. 3. Add more water as required. 4. Remove bay leaves and puree the soup in a blender. 5. Then pass the soup through a fine sieve to remove the skins of the beans. |
