Black Bean Soup With Sour Cream and Mango Salsa

This is an adopted recipe. Hmmm... lookie, there's no mango here, yet. I aim to fix that, thanks. :) Gimme a bit o' time to take care o' that, eh! :)
Ingredients:
2 cups black turtle beans
1 cup onion, diced
1 carrot, diced
2 stalks celery, diced
3 slices bacon
2 cups chicken stock
salt and pepper
4 bay leaves
1 tablespoon honey
Directions:
1. Combine all the ingredients and add enough water to cover the beans.
2. Bring to a boil, then reduce to a simmer and cook until beans are thoroughly cooked.
3. Add more water as required.
4. Remove bay leaves and puree the soup in a blender.
5. Then pass the soup through a fine sieve to remove the skins of the beans.
