A ginger-spicy hearty black bean soup loaded with fiber and protein. Ingredients:
4 cups chicken broth |
1 c raw black beans, rinsed and drained |
2 carrots, chopped |
1 onion, chopped |
1 tsp. cumin, ground |
1 tsp. ginger, fresh chopped |
1 tsp. black pepper |
1/8 tsp. salt |
1/2 c. parsley, chopped |
Directions:
1. 1 cup of raw black beans is equivalent to 2 12-ounce cans of black beans. Drain and rinse canned black beans before using, or soak raw black beans overnight and cook before preparing the soup. 2. Add broth, beans, carrots, onion, cumin, ginger, pepper, and salt to a soup pot and bring to a boil. Reduce heat and simmer for 60 minutes. Sprinkle individual servings with parsley before serving. |
