I make this after we have bone in ham for dinner. I puree it to hide the vegetables from my kids. They love the soup. Ingredients:
left over ham bone |
celery |
carrots |
onions |
any other leftover veggies |
4 stalks cerlery diced |
4 carrots diced |
1 large onion diced |
2 tbs cumin |
2 tbs garlic diced |
1/4 bunch cilantro |
2 large cans black beans drained |
leftover ham diced |
Directions:
1. make stock with ham bone and leftover vegies 2. saute diced vegetables until soft 3. add spices 4. combine stock, vegetable mixture, black beans and simmer for 1 1/2 hours 5. add diced ham 6. heat through 7. puree or leave it alone 8. serve with sour cream and shredded cheddar |
