Black bean soup with tomatoes, onion and garlic Ingredients:
45 oz black beans, canned |
30 oz diced tomatoes, canned |
1 med onion, diced |
2 cans beef broth |
1/2 tsp cumin |
4 cloves garlic, minced |
Directions:
1. Drain black beans. 2. Saute onions and garlic in a little oil or cooking spray until soft but not brown. 3. Add all remaining ingredients. Simmer for approximately 1 hour, stirring occassionally. 4. Makes approximately 24 half-cup servings. |
