This Pre-1940's recipe included in my “Grandma’s Wartime Edition Cookbook” Ingredients:
1 pint black beans |
2 quarts water |
1 onion |
1/2 teaspoon salt |
1/4 teaspoon pepper |
1 1/2 tablespoons butter |
1 1/2 teaspoons flour |
1 egg (hard boiled) |
1 lemon |
Directions:
1. Wash and soak beans overnight in 2 quarts water. 2. In the morning add onion and simmer until beans are soft. 3. Add more water if necessary. 4. Rub through a sieve and re-heat. 5. Add seasoning and butter and flour rubbed together. 6. Just before serving add thin slices lemon and egg. |
