From my collection of handwritten recipes 1970-1984. Note: Overnight soaking time is not included. Ingredients:
2 cups black beans |
1 ham bone |
1 stalk celery |
parsley |
4 tablespoons butter |
1 onion, sliced thin |
2 quarts water |
1/4 cup sherry wine |
Directions:
1. Soak the beans overnight in water to cover. 2. Drain and cover with 2 qts. fresh water. 3. Add ham bone. 4. Add sliced onion, parsley, and celery to taste. 5. Simmer 3 1/2 to 4 hours in a covered pot, until soft. 6. Rub the beans and liquid through a sieve. 7. Reheat, add butter, pepper and salt to taste. 8. Stir in sherry. |
